I use EasyCap
You can use a converter to use component cables.
It looks good standard def though without component cables. Here's a video how to do it, my opinion not its not needed.

You can buy it on ebay for less than $5, also, I think amarecTV is the best software to use with this device.

The 5$ ones are fake and usually of bad quality, the real one is called Ezcap DC60, not EasyCap, and is far more expensive than the crappy clones.
The most current model now is the DC60+, but don't expect to find it for 5$, more like 30.

The Elgato Game Capture HD should do the trick. It comes with a component adapter/cable and you can use your console’s composite cables. I’ve never used the Elgato with an Xbox but it works like a charm with a Dreamcast or a PS2.

I use a Hauppague HD-PVR 1212. More on the expensive side, but it does a great job. It has component input for EDTV/HDTV, and composite/s-video inputs for SDTV, and I used to use it with capturing live TV from U-verse.

I use an Elgato HD60 and use a Component to HDMI adapter. Works great, Can even live stream gameplay to Twitch and Youtube.
